We love tacos in our house!!  This is a fun twist on tacos and it’s naturally a gluten free meal for all of us 😉

Taco Skillet


Brown up one pound of hamburger meat along with 1 onion sliced until meat is no longer pink.

After the meat is brown and the onions are soft, add in a 16 ounce can of your favorite tomato sauce a little salt and pepper and 1 cup of uncooked rice.  Cover and let simmer for 15-18 minutes.  


Let simmer until liquid is gone.  After about 15 minutes take the cover off and stir in a 16 ounce can of pinto beans that has been rinsed and drained.


Add your favorite kind of shredded cheese on top and cover for a few minutes just to let it melt.  Sprinkle with any toppings you like, we used chopped black olives.  Feel free to serve with sour cream and/or chopped tomatoes etc…enjoy!


Serve with corn chips!


My Little Gluten Free Girl liked to scoop up the taco meat with her corn chips!  I crunched up the corn chips and put them on top like a taco salad and my son just liked to eat the corn chips along with the taco meat and my husband just liked the taco meat!   We all enjoyed this dish in our own way;)

This was so fun to create and to snack on!  My Little Gluten Free Girl loved this fun snack that we made after school!  We have been enjoying the 2018 Winter Olympics and so we thought it would be fun to make something with an Olympic twist 😉

Our Olympic Snack Rings


You can use anything you would like to create this fun snack!

We used blueberries for the blue ring, pineapple chunks for the yellow ring, black olives for the black ring, mini cucumbers for the green ring and grape tomatoes for the red ring.  

So much fun!  Gluten Free and Yummy 😉



My Little Gluten Free Girl loves everything and anything in a Jambalaya as long as I don’t make it to spicy!  This is a quick go to on any night for a really satisfying meal for all of us!!!  (even my son likes it)

Our Jazzy Jambalaya

I just buy the box of Zatarain’s Jambalaya mix and follow the directions on the box.  It’s pretty darn tasty and gluten free and a very easy weeknight meal!  

You can add in any kind of protein that you like to the rice mix.

I add in polish sausage, but shrimp would be great in this as well!

I slice up the polish sausage into diagonal pieces, throw them in a skillet to brown up a little bit before putting into the jambalaya mix.

My kids saw this fun little snack on a TV commercial so they wanted to make it!  So easy and so healthy and so yummy!  My Little Gluten Free Girl seriously ate these up in minutes 😉

Hummus Cupcakes

You literally need two things for this snack, hummus and a cucumber!

We used our favorite store bought hummus for this fun snack.  Use any kind of hummus you like or you could even make your own!

I cut thick slices of cucumber and My Little Gluten Free girl took a tiny spoon and scooped out the middle of the cucumber.  She spooned a little hummus into the cucumber making the cutest little veggie cupcake with hummus on top as the frosting 😉

The kids have had some snow days this week with the big snow storm that we had in the Twin Cities so My Little Gluten Free Girl and I made these yummy and a little healthier version of potato skins!

We used zucchini as the skin instead of a potato!  They turned out tastier than I thought and My Little Gluten Free Girl loved them!

Zucchini Skins

The biggest thing in this recipe is just preparing the zucchini.  Pierce some holes in a zucchini with a knife or fork and put in the microwave on a safe plate for 2 minutes.  Take out after two minutes and flip the zucchini to the other side and put in the microwave for another two minutes or until soft.

Let zucchini cool and cut zucchini in half and make little skins by scooping out the flesh of the zucchini, make sure to pat dry.

Place skins on a baking sheet that has been sprayed.  Put whatever you would like on top like a potato skin.  We put chopped up pepperoni and lots of shredded cheese and a little salt and pepper.

Put into a 375 degree oven for about 10 minutes, until the cheese has melted.

Sprinkle with tomatoes and a dollop of sour cream and enjoy!

This would be a great veggie platter to bring to a holiday party! 

Veggie Santa

You will need cauliflower, I bought it already cut up in a bag.  You will also need grape tomatoes, 1 cucumber sliced in circles and a red pepper cut in strips as well as black olives for the eyes.  You will also need a little bowl of dressing for the end of Santa’s hat.

Just arrange your Santa- My Little Gluten Free Girl did it all by herself and did such a good job!!  We used black olives for the eyes, a grape tomato for the nose and a little slice of red pepper for the mouth!

My Little Gluten Free Girl has been loving pears lately, so I decided to do a cute Thanksgiving snack for her after school one day and this is what I came up with 😉

Thanksgiving Pear Snack

All I did was take a pear and cut one side flat for the head/face.  I had butterscotch chips so I used those for the eyes, but feel free to use anything you have for the eyes.  I used a tiny piece of pear for the nose and then cut up 2 pears for the turkey feathers!!  We used gluten free pretzels for the turkey legs!
