So cute and really tasty!  

Christmas Cheese Trees

Just buy some Laughing Cow white cheddar cheese wedges along with a bag of gluten free pretzel sticks.

Just add the triangle of cheese onto the pretzel stick.

We added a pinch of dried rosemary and thyme to the cheese.

I had this drink at a get together last weekend and I loved it!  So, of course I had to make it at home and of course it has to be gluten free!  All you need is club soda, half and half and your favorite gluten free flavored syrup!  It’s a fun drink to have around for the holidays!!  My Gluten Free Girl just loved it 😉

Our Homemade Holiday Italian Cream Sodas

YUMMY!!  Use any flavor you like- we used French vanilla and the French vanilla Torani brand is gluten free, make sure you check your flavor and brand to make sure it’s gluten free.

Put a handful of ice in a cup, pour 1/2 cup of club soda into the cup over the ice.  Pour 3 TBSP of your favorite flavored syrup over the club soda.  Finish with 1 TBSP of half and half.

Mix well.  Enjoy!  Gluten Free and Yummy 😉

 

I was so excited to make this for dinner this week, it turned out even better than I thought it would!  YEAH 😉

My Little Gluten Free Girl loved it and so did I and my husband liked it better than he thought he was going to, he even took the leftovers to work for lunch today!

Veggie Skillet Lasagna

I used cremini mushrooms, green bell pepper, onion and zucchini in this dish!  So good!

I used a little help from the grocery store, I bought already chopped onion and zucchini and just threw that into the skillet along with 1 green pepper that I chopped up and 1 package of cremini mushrooms that I chopped up as well.  Throw all of those veggies into a skillet (I used my Dutch Oven) with a good amount of olive oil and let cook for 7 minutes or so.  I added a few sprinkles of garlic salt and pepper along with a pinch of dried basil.

As this is happening, cook up about 3 ounces or so of your favorite pasta according to package directions.  Set aside pasta when finished boiling.

After the veggies have cooked for about 7 minutes, add in cooked pasta and 1 jar of your favorite pasta sauce and mix well together.  Bring that up to a boil, stir and let simmer a few minutes. (Obviously I use gluten free pasta and gluten free pasta sauce;)

After this step, sprinkle the top with about 1 1/2 cups of shredded mozzarella cheese.  Feel free to use another type of cheese if you would like, just sprinkle a few handfuls of your favorite kind of cheese on top.

Put oven safe skillet under broiler for about 4 minutes or so, until cheese is golden brown.  Please make sure to watch this step under the broiler as it works quickly and can burn easily so don’t put under the broiler and walk away.

Serve nice and hot!  Gluten Free and Yummy 😉

 

On my gosh so cute and so fun and so yummy!  Perfect for Halloween night to just set out so everyone can snack on veggies while getting all of that candy 😉  Use whatever vegetables you like- be creative and just have fun!

Our Halloween Veggie Skeleton

So- last night My Sweet Boy and My Little Gluten Free Girl and I had a blast creating our vegetable skeleton!  It was so cute because as we were creating it the kids were munching on veggies which made Mommy happy 😉 

We got our creative juices flowing and this is what we came up with!  

We used celery, baby carrots, orange bell pepper, cauliflower, cucumbers and a red bell pepper!

My sister shared this with me and it was the perfect snack for my two kids!  My Little Gluten Free Girl loves oranges and My Sweet Son loves celery so pairing both of those yummy gluten free foods into a fun Halloween after school snack was brilliant 🙂

Pumpkin Oranges

 

Seriously all you do is peel an orange and use a tiny bit of celery for the pumpkin stem and a few celery leaves for the pumpkin leaves 🙂

Oh my gosh we loved this dish for a Fall School Night dinner!  My husband took the leftovers to work for his lunch- yeah!! 

Mediterranean Chicken Skillet

First, you just cook chicken breasts in a skillet for about 6 minutes on each side…depending on the size of you chicken.  Make sure to add in a little olive oil to the skillet along with a few pinches of salt and pepper on each side.  Get those nice and juicy and brown.

I bought a tomato basil flavored bag of fresh chicken breasts and they were so juicy!  Take those out of the skillet when they are done and let them rest on a cutting board and cut them up after about 5 minutes or so.

Set the chicken aside and put a little olive oil in the same skillet as you cooked the chicken in.  Add in as many cherry tomatoes as you want and let blister for about 3 minutes.  Add in 1 cup of marinated artichokes and 1 cup of a variety of olives (pitted of course) into the skillet along with 1 cup of chopped up roasted red peppers.  Let all cook together for about 5 minutes or so.  I added in a little bit of the artichoke marinade and a pinch of salt and pepper.

I used microwave white rice.  Put as much or as little as you like on a platter.

Put the cooked, cut up chicken back into the skillet with the veggies and let simmer for a few minutes.

Pour on top of the rice and enjoy!  We added a little feta cheese on top but you don’t have to.

This salad was so fun to make with My Little Gluten Free Girl!  She made it and she ate it 😉

Feta, Cucumber and Watermelon Salad

All you need is a chunk of feta cheese, a few cucumbers and some watermelon!

We bought a flavored feta cheese and it was good!  Cut them all into little squares and arrange on a plate. We found a tomato basil flavored feta cheese, you can use regular or whatever you can find.

The key is to cut up all three ingredients into the same size and create a fun square salad with them.
