Tonight was kind of a snacky night for dinner- we were playing outside, went for a walk and we weren’t really that hungry so I decided to make yummy artichoke dip for us to snack on.

Artichoke Dip

Just take 8 oz. of cream cheese and mix with about 1/2 cup of mayo.  Add in a can of artichokes, I add more because we love artichokes!  Mix with parmesan cheese, mozzarella cheese and breadcrumbs( I just eyeball all of this to whatever looks good).  Mix all together and spread into a 9 inch pie plate and top with breadcrumbs (Gluten Free breadcrumbs of course-I make my own).  Bake at 375 degrees for about 25-30 minutes. We like to eat it with veggie dippin tortilla chips.  Enjoy- it’s a fun snack 🙂
