This Nacho Casserole is so yummy!  My Little Gluten Free Girl really likes it and so does my husband and I.  My Sweet Little Boy isn’t to sure about it yet!  When I put dinner on the table- my husband thought it was funny to use the vegetables and fruit to make a smiley face on the casserole 🙂  Check it out!  Fun stuff happening around the dinner table!024Nacho Casserole

Just cook up about a cup of chopped green or red peppers and a cup of chopped onions for about 5 minutes until they are soft.  Add a can of corn(or frozen corn)and about 8 oz of salsa to the peppers and onions and add just a bit of tomato sauce, I like to add a can of diced tomatoes as well even though they are not my husband’s favorite.  Bring that all up to a quick boil and add about a cup or so of cheddar cheese to the mixture.  Put the mixture in a casserole dish on top of crushed tortilla chips and crush more tortilla chips on top of the mixture along with another cup of cheese to top it off.  Bake for 30 minutes in a 375 degree oven until the edges are bubbly.  YUM 🙂
