My husband created this yummy breakfast dish- our gluten free little girl loves eggs thank goodness because there are so many egg dishes we can make for her such as egg bakes, scrambled eggs, fried eggs, omelettes, hard boiled eggs etc…of course eggs don’t have to be just for breakfast.  We eat them morning, noon and night!


Spinach Scrambled Eggs

Start scrambling 3 whole eggs and 3 egg whites (crack the egg and rock it back and forth in the shell to just get the egg white) in a pan coated with olive oil on medium to low heat.  You want to scramble eggs on a fairly low setting.  While scrambling, add 1/4 cup fresh spinach, 1 handful of feta cheese, 1 handful of chopped red peppers and salt and pepper to taste.  Scramble up until cooked through, serve nice and hot!  YUM!
