Oh my gosh I have been craving cooking at home!  I miss cooking when I am away- I miss cooking with My Little Gluten Free Girl, I miss cooking for my Family and I miss Eating at Home with my Family!  I have been away on business for the last 4 days and right away when I got home I needed to cook!

Quinoa and Brown Rice Stuffed Red Peppers

Cut 2  red peppers in half and take all of the seeds and ribs out, place them in a 9 x 13 baking dish.  In a pan, coat with a little olive oil and add 1/2 of a chopped red onion to the pan and saute for a few minutes.  To the onion, add a can of black beans rinsed and drained and a can of diced tomatoes.  Cook that for about a minute or two and I added a bag of already cooked Quinoa and Brown Rice.  Mix that all up in the pan and add 1/4 cup salsa and 1/2 cup of chopped black olives.  Grate about a cup of cheddar cheese into the mixture and let it melt right in while stirring it.  I added 1 tablespoon of cumin and a pinch of oregano and basil and salt and pepper to taste.  Just mix it all together and heat through on medium heat.  Spoon the mixture into the peppers and grate cheddar cheese on top of the peppers.  Bake in a 375 degree oven for 30 minutes.  So Tasty 🙂
