We love BLT’s at our house and we love a good Caprese Salad so I thought I would combine the two and make one really good pasta salad!  I took the bacon, lettuce and tomato from the BLT (instead of lettuce I used spinach) and I took the fresh mozzarella, basil and balsamic (and tomato too) from the Caprese and combined these yummy flavors to create a fun new dish that we all enjoyed!

BLT meets Caprese Pasta Salad

I like to cut all of my ingredients first and put them in a big bowl so when the pasta is ready, I just pour the hot pasta into the bowl and let all of the ingredients melt together!  Cut 2 cups of cherry tomatoes in half and put into a large serving bowl.  Add about 1/2 cup of chopped bacon, big handful of spinach, 1 cup of diced fresh mozzarella, 2 teaspoons of dried basil, 2 teaspoons of salt and about 1/4 cup of balsamic vinegar or balsamic dressing.  We also added black olives just because we like them even though they aren’t in a BLT or a Caprese.  Cook 8 ounces of gluten free pasta according to the package and add to the bowl.  Mix well.  YUM 🙂
