When I first heard of this recipe I thought it sounded very interesting!  We like rice but sometimes fried rice is to greasy so putting cauliflower instead of rice makes it a lighter and healthier dish and actually it was quite tasty!  Plus, you can use up all of your veggies!


Cauliflower Fried Rice

I used half a head of cauliflower and pulsed it in a food processor.  I scrambled 3 eggs and set them aside.  Put a little olive oil in a pan on medium heat and cook 1 chopped onion and 2 diced carrots until they are soft, so about 5 minutes.  Add 1 cup of chopped mushrooms, 3 cups of broccoli and 1 cup of snap peas.  Cook for another 5 minutes and then add in the cauliflower, turn up the heat a little while you add 1/4 cup of gluten free soy sauce and stir for about 2 minutes or so and then add the eggs and stir for another minute or so.  I added about 2 teaspoons of ground ginger at the end.  Serve nice and hot!  You really can add any vegetable you want or have on hand.  We all really liked it- it turned out nice and light and tasty 🙂
