My Little Gluten Free Girl asked for more after she had a few bites of this dish.  This was really something different that I wanted to try because I love roasted red peppers!  This dish has all of the flavors we love!  In all of my dishes I tell you what I did to make them either from something I have seen or read about or made up myself but feel free to tweak and add and subtract to make it your own- that is what makes cooking fun!

Roasted Red Pepper Bake

I used a jar of store bought roasted red peppers and covered the bottom of an 8×8 baking dish.  Slice up 1 cup of kalamata olives and sprinkle those over the top of the roasted red peppers, sprinkle 1 cup of italian cheese over the olives and add some chopped fresh basil or just tear some over the cheese, add a pinch of salt and oregano and then finish with another layer of roasted red peppers with olive oil on top.  Bake in a 400 degree oven for 20 minutes or so, let rest before cutting into!  Delish 🙂
