My husband surprised me today when I got home from work with dinner!  He impressed me with this absolutely amazing simple and elegant dish.  He knows that My Little Gluten Free Girl and I love zucchini and shrimp and bell peppers so this dish really was so tasty and impressive!  My husband turned the zucchini into pasta noodles and added the shrimp and bell peppers to create an incredible dish!

Zucchini Ribbons with Shrimp and Bell Pepper


Take 2 zucchini and thinly slice with a mandolin and then cut into strips.  Put the zucchini strips in the microwave for 2 minutes and then let the zucchini drain so all of the moisture comes out.  Meanwhile season about 15-20 pieces of frozen shrimp that has been thawed with salt, pepper, lemon pepper, paprika and McCormicks mesquite and smokehouse maple seasoning, season to taste.  This is the seasoning that my husband used but you could really use any kind of seasoning that you like. Cut 1 yellow bell pepper into strips and saute in a large skillet on medium heat with a bit of olive oil.  Throw shrimp in with the peppers and saute until the shrimp is opaque and cooked through.  Throw the zucchini strips into the skillet for just a minute to let all of the flavors meld.  Serve nice and hot!  WOW 🙂
