Eggplants are one vegetable that I never used to cook with or eat and now we cook with them all the time and we love them 🙂  I love their purple color and how you can do many different things with them!  This is one of my favorite recipes and my favorite way to use eggplant!  YUM!

Eggplant Rollatini

Cut 1 eggplant into thin slices length wise and heat a bit of olive oil in a large skillet over medium heat.  Put about 3 slices of the eggplant in the skillet and salt each side for a few minutes until they start getting soft and a little brown, turn over to the other side for a few minutes and take out and put on paper towels.  Repeat until all of the eggplant slices are soft and golden brown.


Mix 1 cup of ricotta cheese with some basil, oregano and italian seasoning along with a pinch of salt and parmesan cheese.  Spread mixture onto each piece of eggplant and roll up.


Spread one can of tomato sauce on the bottom of a casserole dish.  I like to add a pinch of basil, oregano and italian seasoning right on top of the tomato sauce.


Place each rolled up eggplant in the casserole dish and cover with another can of tomato sauce and sprinkle with mozzarella cheese.  Bake in a 350 degree oven for 30 minutes.  So cheesy and delicious 🙂
