Ok, I have heard of gazpacho, I have watched it being made on different TV shows and I have noticed different recipes for it in magazines but I have never tasted it or tried to make it so finally I decided to try it!  Gazpacho is a cold vegetable soup, my husband flat out said he wouldn’t eat cold soup, so I was basically going to make it for My Little Gluten Free Girl and I to try!  I found a recipe on The Pioneer Woman cooking show that I thought looked pretty good, so I tried it but of course I added and subtracted a few things from her recipe to make it my own!  We all really enjoyed it…yes, even my husband 🙂



Cut 1/2 of a red onion into slices, dice up about 3 tomatoes, dice up 1 celery stalk, dice up 1/2 of a cucumber, dice up 1 zucchini and I also chopped up 1/2 of a red pepper.


Pour 1/4 cup of olive oil in a food processor and add in half of the chopped veggies (save the other half of the cut up veggies for later).  Add in about 1 tablespoon of sugar and a little salt along with 1 cup of tomato juice and blend well.


Pour in a big bowl and toss in the rest of the chopped veggies and stir it all together, pour in another cup of tomato juice and stir that all together.  Adjust seasoning if needed and refrigerate for an hour or so.  Serve with grilled shrimp and fresh cilantro on top- the warm shrimp on top of the cold soup is so yummy 🙂
