I dug this one out of the archives and tried it again!  I tried this recipe before we had yummy gluten free bread and before I really was comfortable in the kitchen and enjoyed cooking.  I don’t remember liking it that well and it didn’t turn out very good.  Well, I thought I would give it another try last night for a light dinner and it may now be one of my favorite go to meals!  We all liked it a lot 🙂

Baked Caprese

This is like a perfect recipe for my style of cooking.  Simple, Fresh, Quality Ingredients, Whole Foods, Gluten Free, Meat Free = Delicious and Satisfying.

Put down parchment paper on a baking sheet and slice up 3 Roma Tomatoes and place them as the first layer on the baking sheet.  Drizzle with a little balsamic vinegar.

Next, I sliced up fresh mozzarella and placed them down as the second layer on the baking sheet with a pinch of salt, olive oil and fresh basil.

Finally I put 6 pieces of gluten free bread on top and drizzled olive oil over them.

Bake in a 375 degree oven for 25 minutes.  Really Delicious 🙂
