This is so simple yet so elegant looking and delicious, not to mention refreshing!  My Little Gluten Free Girl and I had a girl’s lunch this weekend and we both really enjoyed this salad.


Cucumber Olive Salad


I sliced up one cucumber in 1/4 inch thick slices and laid them all on a plate and topped them with thin slices of tomato ( I used about 3 of them). I just took 1 cup of black olives and added them to the salad and I took 1 cup of green olives sliced them in half and added them to the salad. Top it off with some feta cheese and fresh basil and fresh oregano. You can use any kind of dressing you want to drizzle on top, such as balsamic or olive oil.  I used a really nice Greek olive dressing which added a nice, simple flavor to the salad.  YUM 🙂
