I was in an airport shop looking at a magazine and saw an eggplant recipe and a sandwich recipe which gave me the idea for this simple eggplant sandwich!  It really turned out nice and yummy, easy and fresh!

Eggplant and Mozzarella Sandwich


Slice two pieces of eggplant that will act as the bread for the sandwich.  Sauté them up in a pan over medium heat in a bit of olive oil on both sides for a few minutes until they are golden brown.  Slice up a few pieces of fresh mozzarella and put in between the eggplant and add a little pesto on top of the cheese and sauté it for a minute or two until the cheese melts.  Serve nice and hot with a bit of pesto on top!  YUM 🙂
