I know it’s summer and this is a warm dish but I can’t get enough of this soup! It is so tasty, hearty, filling and full of all of our favorite flavors! It smells so good when it’s cooking that My Little Gluten Free Girl and I can’t wait until it’s done 🙂

Lasagna Soup

Start browning up 1 pound of gluten free sausage in a big pot until no longer pink, about 7 minutes or so.

Add 1 onion chopped to the sausage and cook for another 6 minutes or so until soft.  I used 1/2 white onion and 1/2 red onion.

Add a pinch of basil and Italian seasoning along with 1 tablespoon of tomato paste and cook for another 5 minutes until it all turns a rusty brown color from the tomato paste.  It gives it a nice deep tomato flavor.

Then stir in 1 can of diced tomatoes along with 4 cups of gluten free chicken broth and 2 bay leaves and bring to a boil for a minute then turn down and simmer for 30 minutes.

After 30 minutes add in about 8 ounces of gluten free pasta, I used fusilli but you could use penne or whatever you have, and cook according to package time probably another 12 minutes or so.

Serve it up!  I have done a few different things when I serve it.  I have placed a dollop of ricotta cheese on top which is very good, I have sprinkled mozzarella on top which is also very good and today I went with simply adding freshly grated parmesan on top which is delicious!  I absolutely love this soup 🙂
