I wanted to try to use avocados more so I thought… what about stuffing them with something?  Well, I saw a recipe similar to this in a magazine which inspired me to create this yummy Gluten Free Dish 😉



Quinoa Stuffed Avocados


I use already cooked quinoa that I buy in packets.  So get the quinoa ready which is 90 seconds in the microwave.  This really cuts down on cooking time with the quinoa and it’s really good.  Put the quinoa aside.

Chop up 1/2 of a red pepper, 1/2 of a red onion and 1 tomato.  Toss the red pepper, red onion and tomato in with the quinoa and mix well.  Drizzle a bit of olive oil and a few pinches of salt into the quinoa mixture and toss together.

Take 2 avocados and cut in half and just run your finger around the outside skin to take it off leaving the avocado halves in tact.  Stuff the avocado with the quinoa mixture and add a few more pinches of salt to top it off!  Really pretty and yummy 🙂
