So yes I have been looking to create dishes with zucchini in them!  We have lots of zucchini and I really want to use them in fun and unique ways that are yummy!  I have been thinking up dishes and this is one that I was excited to try and it turned out really good.  It was 4th of July weekend so it was a good time for me to try some new dishes- my husband was working all day and so by the time he got home I had this all ready to try and he really liked it.  I call them zucchini bites because you can eat them in one bite but that one bite packs a yummy punch 🙂

Zucchini Bites


I used one zucchini for this and it made one baking dish full but next time I would use 2 to make more because they really were so good!  Serve them with a salad and they are a perfect little meal.  Take one zucchini and using a mandolin make nice medium thick slices and lay out side by side.


Next, spread some pesto onto each zucchini slice and top that with ricotta cheese and top the ricotta cheese with tomato sauce, just enough to cover each piece.  My Little Gluten Free Girl helped me and we had a good time ( a little messy but fun).



Roll each slice up and put into a baking dish.  Top off with the rest of the tomato sauce and a little bit of mozzarella cheese.  Bake in a 375 degree oven for about 25 minutes.  I finished under the broiler for about 4 minutes until the cheese got nice and golden brown on top.

Take out and let cool for a few minutes.  Delish 🙂
