I enjoy thinking of different ways to use mushrooms, especially the big Portobello Mushrooms.  We had a few in our fridge so I decided to try making a sandwich out of them using the Panini grill and it turned out pretty good.  I love thinking of ways to make sandwiches without traditional bread and this was one fun and unique way!

Grilled Portobello Mushroom and Red Pepper Sandwich

Take the large Portobello mushrooms and drizzle olive oil over them.  Take 1 red pepper cut it in medium size pieces and drizzle with olive oil.  Place in a sauté pan for about 3 minutes on each side.  As they are cooking sprinkle a bit of salt, dried oregano and a splash or two of balsamic vinegar on each of them.  Take out of the pan and let cool.

Cut the mushroom in half and place 2 pieces of fresh mozzarella on one half and a few pieces of the red pepper with a pinch of salt.  Put the other half of the mushroom on top and put on Panini Grill and press down for about 4 minutes until the cheese melts (make sure to spray your Panini grill with cooking spray).

I served it with a bit more balsamic vinegar over the top and a pinch of salt and your choice of either fresh or dried rosemary or thyme, what a fun sandwich without bread 🙂
