Super easy, really cute and fun to eat not to mention pretty yummy!  Enjoy as a nice breakfast or a late night snack, this is something fun and different!

Eggs in Peppers

Take 1 red pepper and cut into rings.

Drizzle olive oil in a pan and put in the pepper rings.  Crack the eggs into each pepper, cover and cook on low for about 5 or 6 minutes until the eggs set.  I really like herbs de provence on eggs so I added a touch of this yummy seasoning on the eggs while they were setting along with a pinch of salt.

Serve with gluten free toast and enjoy!  What a fun way to eat eggs 🙂
