This is surprisingly tasty and juicy!  A really nice summer meal!  Believe it or not my husband actually made this meal and wow it was good 🙂  I like to think he actually watches me in the kitchen and he gets these yummy good ideas from me 🙂

Summer Vegetable Pasta


Take one summer squash and one zucchini and use a mandolin to slice thin pieces of each.  Then, with a sharp knife, cut into thin spaghetti like strips.  Salt and set aside.

Next, sauté two Portobello mushrooms in a pan with olive oil for a few minutes and then chop those up and put in a bowl.  Dice up a few tomatoes and place in the same bowl with a pinch of salt.

Take the strips of zucchini and squash and place in the microwave for 2 minutes and then strain the water out.

Mix all ingredients together and top with parmesan cheese!
