I have been wanting to try my own version of eggplant stacks- so here they are 🙂

Eggplant Stacks

Cut one red pepper and one green pepper into rings.  Cut 1/2 of an onion into rings and cut eggplant into rounds.

Put olive oil into a pan and sauté the peppers and onions in batches so they have enough room and don’t steam.  You want them to get a nice golden color with a little carmalization on them which gives them nice yummy flavor!  I salted them while they were cooking and added a little dried basil and garlic seasoning.

After the peppers and onions are done, let them cool and sauté the eggplant so they get nice and brown with a little color on them (you will need to add more olive oil to the pan).  I added a little pesto on each eggplant round and salted them a bit while they were cooking.

When the eggplant get brown and pretty much done cooking add a dollop of ricotta cheese on top of each eggplant and place a red pepper ring, a green pepper ring and an onion ring on two of the eggplant rounds and use the other two as tops for the eggplant stacks.

Stack the eggplants and finish with an eggplant round on the top.  Sprinkle a bit of mozzarella cheese on top and turn over once so the cheese melts.

These turned out really yummy!  I was so happy with these- really flavorful and tasty 😉
