I absolutely love the flavors of anything caprese.  I have been trying different dishes with tomato, fresh mozzarella and basil.  This is such a yummy yet simple sandwich that I seriously could eat every night and so could My Little Gluten Free Girl 🙂

Caprese Sandwich


The key is yummy gluten free bread, fresh mozzarella and juicy tomatoes to make this sandwich tasty!

I like to cut up one tomato and lay on one side of the bread with a pinch of salt and some dried basil.  Cut up a few pieces of fresh mozzarella and put on the other piece of gluten free bread and drizzle with a bit of olive oil, salt and dried basil.


Just pop under the broiler for about 5-7 minutes until the cheese is melted and the bread is a bit brown and toasty.  Take out of the oven and you can eat open faced or put them together!  YUM!
