My family and I were hungry for just a little snack the other night and for some reason nachos came to mind and I of course wanted to add some veggies to it so I thought why not make a fresh homemade pico salsa to put on top!  I also used three types of cheeses which really made this the perfect snack 🙂

Three Cheese Pico Nachos


Put gluten free tortilla chips on a big plate.  Sprinkle mozzarella, provolone and cheddar cheese on top of the chips along with a few pinches of dried oregano.  Put in microwave for about 1 minute.  

Cut up 1/2 of a green pepper, 1/2 of an onion and 1 tomato and mix all together in a little bowl.  Add a little salt and about 1 tablespoon of lime juice and a pinch of basil and garlic seasoning.  Put on top of the hot nachos and enjoy!
