I saw a picture of something similar to this and thought right away I have to try my own version!  So I made it my own and named the dish Eggplant Accordion because of the way it fans out!  So fun to make and so good- what a fun idea and a yummy dinner!

Eggplant Accordion

I only used half of an eggplant and cut down into slices like an accordion so don’t cut all the way through.  Slice fresh mozzarella to fit in between each piece of eggplant, place a piece of cheese in each spot.

Next, pour 2 cans of diced tomatoes all around the eggplant in an 8 x 8 baking dish and pour 1 can of tomato sauce all around the eggplant.  Add a few fresh basil leaves and a few extra pieces of mozzarella to the sauce and put in the oven for 30 minutes covered with foil at 400 degrees.

Take out of the oven after 30 minutes and take off foil sprinkle a little parmesan over the top and put back in the oven uncovered for another 25 minutes or so.
