I just keep adding to my caprese dishes and this one was really different for me since I don’t cook chicken all that often but I am going to make it more because My Little Gluten Free Girl really likes chicken!  She loved this dish- she really ate it up which I love to see 🙂


Caprese Chicken Wrapped in Ham


Cook 3 skinless boneless chicken breasts in a skillet with a little butter and olive oil for about 2-3 minutes on each side.  I seasoned with a little salt on each side and some Tuscan seasoning. (You could use dried basil, rosemary, oregano whatever kind of seasoning you like on your chicken)


Take out of pan and let cool on a plate.


Put a piece of fresh mozzarella on top of each piece of chicken and wrap a few pieces of gluten free ham around each one.  Drizzle a little olive oil on top of each piece before you bake them.


Bake in the oven at 400 degrees for about 15 minutes.

Top with chopped tomatoes and a little fresh basil.  Really good and what a lovely gluten free dinner 🙂
