We had our two cousins over for a fun Play Date and had yummy grilled cheese sandwiches for lunch!  I used 3 different kinds of cheeses and I used gluten free bread for My Little Gluten Free Girl and I used regular bread for everyone else so we all could enjoy a delicious grilled cheese sandwich for lunch 🙂

Play Date Grilled Cheese Sandwich

Lay out all of the bread and keep the gluten free bread separate of course.  This is where you really have to keep everything separate when you are cooking and making gluten free meals with regular meals.  Things like using a different knife when you spread mayo on the regular bread and then put the same knife back into the mayo jar and spread onto the gluten free bread, so I always use 2 different knives.

Mix 1/2 cup of Dijon mustard with 1/2 cup of mayo ( I like the kind with olive oil in it).

Spread this onto each piece of bread.

Slice up the cheese, I used 3 different kinds…cheddar, mozzarella and white cheddar.

Place a few pieces of each kind of cheese on the bottom piece of each sandwich.  Put the top on and spread mayo on the outside of the sandwich.

Place in a hot skillet with butter or olive oil and cook on each side for a few minutes until the cheese melts and the bread gets nice and brown.  When you place the sandwich in the skillet make sure to put it mayo side down and then spread mayo on the other side before flipping it over.

Serve with fries and have a fun Play Date 🙂
