This is such a good gluten free dish because you get protein and vegetables and they taste so yummy served in a veggie instead of bread!  My Little Gluten Free Girl really likes this and I love that! 🙂

Tuna Salad in Lettuce Cups

I got some really nice romaine lettuce that I washed.  Let that sit while you make the tuna salad.

Take two cans of tuna and throw into a bowl.  This is the fun part because you can really add whatever yummy veggies you like.  We add in 1 can of chopped black olives, 1/2 of a red pepper chopped up, 1/2 of a red onion chopped, chop up  2 stalks of celery, we love pickles in our tuna salad so we chop up about 3 pickles to throw in. We add in about 1/2 cup of mayo with olive oil and 1/4 cup of Dijon mustard along with a pinch of salt and mix well.

Serve in lettuce cups and enjoy!
