Oh my goodness so I went to this fun little tavern and had something that I hadn’t seen on a menu or even really heard of before.  I love a reuben sandwich, this was called a reuben quesadilla so I had to try it!  I really enjoyed the flavors and thought I could make this at home with corn tortillas and it could be a really tasty gluten free dish.  Well, two of my sisters and I were getting together for lunch and we decided to try to make these ourselves!  I think they turned out pretty good!

We had a really fun lunch at my sisters eating these yummy quesadillas!

Reuben Quesadilla


Get some fresh cut corned beef from the deli and have them shave it pretty thin and spread it onto a corn tortilla, you can use flour but they wouldn’t be gluten free.


On top of the corned beef, add some sauerkraut, as much or as little as you want. On top of the sauerkraut, add swiss cheese.


Add another tortilla on top and put in a skillet with no oil, I find that it makes it nice and crisp but be careful not to burn it.  Cook for a few minutes on each side and add a little lemon pepper seasoning on top of the quesadilla at the end and cut into triangles and serve!
