This was something refreshing, healthy and easy to make for dinner on a hot summer night when my husband got home from work.  My Little Gluten Free Girl loves chicken and my husband loves chicken and spinach so this really worked out great!

Chicken Caesar Spinach Salad


I used 3 boneless skinless chicken breasts and just salted each side and put into a skillet with a little olive oil and let each side cook for about 3 minutes.


I added a little lemon pepper seasoning at the end and drizzled a little more olive oil over each piece before putting under the broiler for just a few more minutes

Take out and let cool before cutting.  

Get a plate of spinach ready, I added a few pieces of chopped roasted red pepper to the spinach before adding the chicken and parmesan cheese.


Drizzle a little caesar dressing over the salad.  I actually used caesar vinaigrette which worked just as well.
