I love soups as you know so I am always on the look out for good soup recipes.  My Little Gluten Free Girl loves beans so this was really a good dish with the really nice flavor of the kielbasa.

Kielbasa and Bean Soup


Cut up a kielbasa in slices and put in a big soup pot with a little olive oil and cook for a few minutes.


Meanwhile drain a can of dark red kidney beans and set aside.


Chop up 1/2 of a red onion and about 3 stalks of celery


Take the sausage out of the pot and let drain and cool.  Throw the onion and celery into the pot that the sausage was in and saute in the oil that is already in there, it really gives some nice flavor to the vegetables!


After a few minutes, throw the sausage back in along with the kidney beans.  Add 4 cups of stock/broth to the pot and season with a little dried oregano and garlic salt. Let it cook for about 5-10 minutes on simmer.  I added in about a cup of rice at the end, I used the minute rice that you cook up in the microwave and then added it into the soup at the end.  I didn’t have any kale or spinach on hand but you could also add either of those in at the end, that would be good too!
