Ok, so I recently discovered flavored balsamic vinegars and oh my gosh I love them!  I decided to do my favorite caprese type dish and use my new black cherry balsamic vinegar over the top, yum!

Roasted Tomatoes and Fresh Mozzarella with Black Cherry Balsamic Vinegar


I cut up a few tomatoes and put them on a baking sheet to just bake in the oven at about 375 degrees for like 25 minutes or so.  I added a little salt and olive oil to the tomatoes before putting them in the oven.


Take out and let cool a little before putting a few on a plate.  Cut up a few pieces of fresh mozzarella and put on top of the tomatoes. Drizzle a little of the black cherry balsamic vinegar on top and add a dollop of basil pesto in the middle.
