So this was something different and fun and really turned out better than I thought! My Little Gluten Free Girl loves bacon, I mean loves it! My husband loves bacon too of course so this was a fun bacon cheeseburger pasta that I made in just one skillet and we added pickles on top which really was a nice touch!
Bacon Cheeseburger Pasta Skillet
Just brown up 1 pound of hamburger in a big skillet. Add in about 1/2 of a chopped onion.
I used microwave bacon to make it a little easier, so put that in the microwave or you certainly can make bacon any way you like. I used about 5 slices, but you could use as many pieces as you would like 🙂 Set that aside.
Add in 1/4 cup of ketchup and one 8 oz can of tomato sauce along with 2 cups of water and 2 cups of gluten free pasta. ( I used fusilli, but you could use rotini or penne or whatever pasta you have) I also added a few drops of regular yellow mustard for a little kick. Bring this all up to a boil with the hamburger and then bring down to a simmer and cover for about 15 minutes.
After about 15 minutes, sprinkle with 1 cup of cheddar jack cheese and the pieces of bacon and serve nice and hot with the cheese all melted on top. Finish with a few pieces of chopped dill pickle on top for a fun garnish! YUM 🙂
