My Little Gluten Free Girl loved this salad!  She was so excited to eat it after helping me make it- I loved watching her get so excited to eat it- she cleared her plate 🙂

Tex Mex Chicken Salad


I used rotisserie chicken which makes it so much easier, the chicken was so juicy and yummy.  Just pull the chicken off and shred it and put it in a bowl, about 2 1/2 cups. Cut up some romaine lettuce and put that in the same bowl with the chicken along with a can of black beans, corn and some thinly sliced red onion.  Put that aside.


In another bowl, put in 3 tablespoons of sour cream along with 1//4 cup of fresh lime juice and 1 tablespoon of olive oil.


Add in a little salt and about 2 teaspoons of honey and whisk together.


Drizzle the dressing over the salad and mix well!
