My Sweet Little Boy said we should name this our Minnesota Soup when I told him it’s called Minestrone soup so here is our Minnesota Minestrone Soup!  It is full of all of the vegetables we love, including my husband’s favorite, spinach!  This has such a nice flavor and it’s a great way to eat up yummy veggies!

Our Minnesota Minestrone Soup


Put in 1 cup of chopped onion, 2 cups of chopped celery and 2 cups of chopped carrots with a little olive oil and 2 teaspoons of dried thyme and a pinch of salt.  Cook for about 10 minutes until veggies soften. 


Pour in two 14 ounce cans of diced tomatoes along with 4 cups of broth/stock and bring to a boil.  Add in 2 bay leaves and about 1 tablespoon of salt and bring down to a simmer for about 30 minutes.


After simmering for 30 minutes, take out the bay leaves and add in one can of cannellini beans drained and rinsed and add in about 3 big handfuls of spinach and just let it wilt into the soup.  Take off heat and add in 2 tablespoons of pesto.


Serve with parmesan cheese and a little pesto on top!  YUM!
