Yes- it’s true…..I Love Soup! Love it 🙂 I have been wanting to try a few different soups this Fall to try to create gluten free versions of them, this is one of them. Turned out really good, a little lighter and of course gluten free and yummy 😉 My Little Gluten Free Girl really helped me in the kitchen with this one and I loved every minute of it!
Broccoli Cheese Soup
Put in 1 cup of chopped onion, 1 cup of chopped carrots and 2 cups of chopped broccoli into a big soup pot.
Add in 4 cups of stock and bring to a boil then simmer for about 10 minutes. Add in a few pinches of salt and a few dashes of garlic salt if you would like.
After 10 minutes, turn the heat off and use an immersion blender to blend it right in the pot until it gets as smooth as you would like it, I like a little texture to my soup.
Mix in 3/4 cup of half and half and about 3 or 4 ounces of shredded cheddar cheese, depending on how cheesy you want it. We like it cheesy of course so I put in almost 4 ounces and saved the rest to put on top. Just let it melt into the soup off the heat.
Really tasty. Serve with a little shredded cheddar cheese on top!
