YUM!!!!!!  This soup warmed me up and made me happy 🙂  We love mushrooms!  My sister makes this really great mushroom soup but it’s not gluten free so I decided to try to make one that would be just as yummy but gluten free 🙂  I think this is it!  My Little Gluten Free Girl loved this soup which made me happy!

Mushroom Soup

I used regular white mushrooms but you could use any kind of mushroom.  I cut up the mushrooms into fairly small pieces to cook them in a skillet.

I used my favorite wild mushroom and sage olive oil to cook the mushrooms in!  Oh my gosh that flavor came through in the soup- wow!  Cook those up for about 8 minutes until the mushrooms are golden brown, set aside.

Chop up 1/2  cup of onion and I also cooked these up in a soup pot in the wild mushroom and sage olive oil.  After about 5 minutes, add in 2 Tablespoons of tomato paste and stir that in for about 1 minute.

Add 1 cup of chicken stock/broth to the onions and tomato paste and whisk it in.  Stir in the cooked mushrooms.

Add in 1 1/2 cups of half and half and stir over medium heat for about 5 minutes.  Add a little salt at the end and serve!
