These were really tasty- an all veggie meal but you certainly could add ground sausage or hamburger to it if you wanted to. An all veggie meal works for us 🙂
Veggie Stuffed Zucchini
Cut 2 zucchini in half and scoop out the seeds, put skin side up on a baking sheet. Spray with cooking spray and sprinkle with salt. Bake those for 10 minutes until tender.
Meanwhile chop up 1/2 of an onion and cook over medium heat with olive oil along with 1 cup of chopped eggplant. Sprinkle with salt and cook for about 7 minutes. After 7 minutes add in 1 can of italian diced tomatoes and cook for another 2 or 3 minutes adding in 2 teaspoons of dried thyme.
Take the onion mixture and stuff each zucchini. Sprinkle grated parmesan on top of each zucchini and lay 2 pieces of fresh mozzarella on top of that.
Bake again in the oven for another 5-8 minutes until the cheese melts. YUM 🙂
This may be a silly question, but do you eat the whole zuccini, like a stuffed pepper, or the inside only, like squash?
Do you recommend any other seasoning since I have to watch my salt intake? This looks so tasty, and gives me lots of veges! Thanks Hayles!
HA! I Love it 😉 You are funny Jill! Yes, you eat the whole zucchini! I would use dried oregano, basil, italian seasoning even a little garlic if you want to add some flavor instead of the salt, anything like that would be really good! Using the can of Italian diced tomatoes helps because it has basil, garlic and oregano in it but of course it has some salt in it as well. I hope you try these- they are really yummy!
