This is My Little Gluten Free Girl’s Favorite salad- she eats it up which I love 🙂  We call it our BLO salad because we use bacon, lettuce and black olives with a little mayo dressing on little gem lettuce.

I discovered little gem lettuce, it’s a mixture of romaine lettuce and butter lettuce and it is good!  Crunchy and sweet and My Little Gluten Free Girl absolutely loves this lettuce!

I wash the leaves and let them dry.

I make a mayo/dijon mustard salad dressing by just mixing 1/2 cup mayo with 1 tablespoon of dijon mustard.

I also really like to make parmesan crisps to put on top of our salad.  These are so easy and add so much yummy flavor to the salad.  Just mix 3/4 cup shredded parmesan with 1/4 cup grated parmesan and make little mounds on either a plain baking sheet or on a silicon baking mat, either one works.  Or, you can just use shredded or grated, whatever parmesan you have really would work just fine. You can add a little black pepper in there too if you want.

Bake those in the oven at 350 degrees for 6 minutes, rotating the sheet after 3 minutes. Take them off and serve warm if you can, otherwise take them off when they are warm so it’s easier and let them cool on a plate.

Meanwhile, take each piece of lettuce and spread on a little of the dressing.  Take some cooked bacon and sprinkle a few pieces on each piece of lettuce, slice up a few black olives and sprinkle a few of those on each piece of lettuce. 

You can either put whole parmesan crisps on and around the salad or you can break it up and sprinkle pieces of the parmesan crisp on top of the salad to add a little salty pop!  What a great lunch to have with My Little Gluten Free Girl 🙂
