I saw something similar to this in a cooking magazine and I got so excited to try to create my own version!  They turned out even better than I thought they would- what a fun and yummy way to eat kale and quinoa!

Kale Rolls


First, make sure you get kale that has longer leaves so you can roll them.


Bring a big pot of water up to a boil and place the kale in the boiling water for 1 minute.


 Take out and put right into a bowl of ice water to stop the cooking.  Let them cool.


I used a mix of quinoa and brown rice, the kind that you get in the package that takes 90 seconds to cook in the microwave, trust me it’s good!  

Using an 8×8 baking dish, cover the bottom with 1 can of diced tomatoes.

Take one piece of kale and lay it flat, put about 2 spoonfuls of the quinoa mixture onto the kale and roll it up.  Lay it in the baking dish on top of the diced tomatoes.  Continue with the rest of the kale.


Pour one can of tomato sauce on top of the kale rolls. Add a few pieces of fresh mozzarella and a little sprinkle of dried oregano on top and bake at 375 degrees covered for 20 minutes, bake an additional 5 minutes uncovered.  Christmas Colors as you can see, what a fun Christmas side dish this would be 🙂


This is really a hearty meal and so delicious 🙂
