Ok, we like our regular potato fries, but it’s been fun trying to find different kinds of fries that are a little healthier!  I have seen different ideas in magazines and on cooking shows and here is a take on one of those.

These were fun and they were pretty good!

Eggplant Fries


First, take an eggplant and cut into strips.  Salt those a little and set aside.

Set up a little assembly line with one container of the eggplant pieces, one container of 2 whisked eggs and the last container of parmesan and breadcrumb mixture.  Put a baking sheet under a baking rack to bake the fries on.


I like to make my own breadcrumbs to make sure they are gluten free.  All I do is take a few pieces of gluten free bread and put them in a food processor and blend them up to make breadcrumbs.  In this case, I also added a few pieces of fresh parmesan to blend up with the breadcrumbs to create a nice mixture to coat the fries with.

Now, you take a strip of eggplant, dip in the egg and then dip in the breadcrumb mixture and put on a baking rack which is on top of a baking sheet.



Bake in the oven for about 8-10 minutes at 350 degrees.

Serve with any kind of dip you want or even ketchup!
