This is one of my favorite soups and I haven’t made it forever. I also realized that I haven’t posted it yet on my blog, I was sure that I had since it’s one of my favorites 🙂  So, I made it last night and here it is!  It really is one of our favorites for many reasons.  I have seen a few different versions of it but this is my version.

Stuffed Pepper Soup


First thing is to brown the hamburger until no longer pink.


Add 1/2 of a red and 1/2 of a green pepper, chopped.  Add 1 whole onion, chopped.  Let those get soft, about 5 minutes or so.  I started using garlic paste in my soups, so I added in a bit of garlic paste and let it mix in with the hamburger, peppers and onion.



Add in 1 can of diced tomatoes along with 1 can of tomato sauce and 4 cups of stock.  Let simmer for 30 minutes covered adding a little salt to taste.


Serve over a bowl of brown rice and quinoa, so good!


A real hearty and tasty soup!
