This was something different for us to try and we all really liked them!  My Little Gluten Free Girl really loved them which made me very happy 🙂  I saw this recipe in a healthy cooking magazine so I like that they are baked, not fried and they have some yummy zucchini in them 🙂

Baked Taquitos

First take one zucchini and shred it on a grater onto a dishcloth.  Squeeze out all of the liquid and set aside.  I had such a good helper for this 🙂

Brown up 1 pound of hamburger and mix in the zucchini.

Add a little salt and cumin and brown until no longer pink, about 7-9 minutes or so.

Take 12 corn tortillas and lay them on a sheet.  Bake in the oven at 425 for about 2 or 3 minutes, just until warm.  Take out and put on a plate with a towel over them to keep them warm.

Take a few tortillas and lay them out.  Put the hamburger mixture on the bottom 1/3 of the tortilla and put your cheese of choice in the middle part of the tortilla and roll up really tight and lay on a baking sheet.  Do 12 of those and spray all of them with canola oil before baking.

Bake at 425 for 14-16 minutes.

Take out and enjoy with salsa, sour cream and guacamole and whatever other sides you want to add!
