Happy New Year!  I thought this was a great dish to start 2014 off with!  I used to love getting ham and cheese sandwiches at Arbys when I was younger so I was thinking of a way to recreate that but perhaps a little healthier so this is what I came up with.  Took away the bread and added some yummy mushrooms…..  My Gluten Free Girl loves ham and we love mushrooms so this was a fun dish to put together that we both enjoyed!  She ate it up 🙂

Ham and Cheese with Mushrooms

Take one piece of gluten free ham steak and tear up a few pieces of gluten free fresh mozzarella cheese to put on top.  Set it in a baking dish and bake at 350 degrees for 15 minutes until the cheese melts and the ham is cooked through.  You could do this without the cheese too, just bake the ham steak by itself if you would like.  Both ways are tasty.  I wanted the cheese because I was recreating one of my favorites, ham and cheese.


Meanwhile, cook 1 pound of chopped mushrooms in a skillet with some olive oil.  Let them brown about 7-8 minutes or so, add a few pinches of salt and cumin about half way through cooking the mushrooms.  You know they are done when they are nice and brown!  I also added a little dried thyme to the mushrooms.


The cheese melts on the ham and looks like this when it comes out.  


Cut it up in fairly big pieces and sprinkle the mushrooms on top!  Enjoy 🙂
