On one of the coldest days in years, the temperature was seriously minus 20 something but actually felt like minus 50 with schools being closed because of the cold, so I had to make some hot soup of course!  This is what I came up with considering what I had in the house!  This is so simple and so warm and so yummy, even my 6 year old little boy told me it was delicious.

Rice Soup


Chop up 4 stalks of celery, about 2 carrots and 1/2 of an onion and let soften for about 5 minutes.  Add in a few pinches of dried parsley and a bit of salt.  I have been using garlic paste lately, so I added in a squeeze of garlic paste to mix into the veggies while they are hot so the garlic paste melts in with the veggies while they cook.

Add in 8 cups of stock, yes that is a lot but this makes a lot!  We had this for dinner and for lunch the next day, yum!  Add in 2 cups of rice and bring to a boil and let simmer about 20 minutes covered.  I actually put in 2 1/2 cups of rice, so depending on how thick you like your soup put in between 2 to 2 1/2 cups of rice.  Or, if you don’t want to make that much soup, put in 1 cup of rice and lower the stock to 4 cups instead of 8 cups.


That is it!  What a yummy, flavorful, gluten free and yummy soup!
