I saw this recipe on Rachael Ray and wanted to try it our own gluten free way.  So, here it is.  My Little Gluten Free Girl loves chicken!

Bake Chicken topped with Breadcrumbs and Parmesan

Take two chicken breasts and put olive oil on both sides along with a few pinches of salt.

I make my own gluten free breadcrumbs.  Just take one piece of gluten free bread and put it in the food processor.  Take 1 cup of the gluten free breadcrumbs and 1/2 cup of grated parmesan and a few pinches of dried parsley, mix together.  Set aside.

Put a little honey mustard on the top of each piece of chicken and put the breadcrumb mixture on top of the honey mustard or you can dip the chicken into the breadcrumb mixture, whatever is easier.  Bake at 375 degrees for 25 minutes.

I served it with a yummy olive salad and extra honey mustard for dipping!  Gluten Free and Yummy 🙂
