My Little Gluten Free Girl and I were grocery shopping and I came across good old rice cakes, which we used to eat but haven’t for a long time!  Most rice cakes are gluten free because they are made with rice flour, but you still have to watch out for whatever else they put in such as flavoring and what brand it is.  Quaker brand cheddar rice cakes are gluten free.  We made these fun nachos with rice cakes as the base instead of tortilla chips!

Baked Rice Cake Nachos


Put the rice cakes in a baking dish.  I browned some hamburger and put that over the rice cakes.  The bigger rice cakes would work really nicely too.  They have a few fun flavors like popcorn and lightly salted that would be good for these nachos too.

Add whatever toppings you like on your nachos.  We put 1 can of diced tomatoes with garlic and onion flavoring, 1 can of sliced black olives and of course some cheese on top.  We used a little bit of cheddar.  Add a few sprinkles of dried italian seasoning and dried oregano.

Bake in 350 degree oven for 5-7 minutes or so.
