Yes- we love mushrooms in our house 🙂  I wanted to add a little something to a plain grilled cheese so this is what I did and it was good!  My Little Gluten Free Girl and I enjoy having these for lunch!

Mushroom Grilled Cheese


First, brown a pound of mushrooms in a skillet with a little olive oil.  I like to use flavored olive oil when cooking with mushrooms. I have tried basil olive oil, orange olive oil, mushroom and sage olive oil and this time I used herbs de provence olive oil and they are all excellent 😉  Flavor with a few pinches of salt and a few pinches of cumin about 4 or 5 minutes into cooking.  Cook until golden brown.


Set those aside.  Spread a little mayo on a piece of gluten free bread and put two thin slices of gluten free cheese on one piece of bread.  Put a few spoonfuls of the cooked mushrooms on top of the cheese.  Put the other piece of bread on top.


Spread a little mayo on the outside of the bread before putting down in a dry hot non stick skillet at medium heat.  While the first side is cooking, spread mayo on the other side before flipping.

Golden brown and cheesy!  Gluten Free and Yummy 😉
