These are simple, yummy and a perfect breakfast for My Little Gluten Free Girl!

Mini Veggie Egg Muffins


She loves whisking eggs!

Whisk up 4 eggs and about 2 tablespoons of milk along with a pinch of salt.  To that, add any veggie you like along with a few handfuls of cheddar cheese.  We added green peppers and black olives!


Pour 1 tablespoon into a mini muffin pan, make sure you spray the pan with cooking spray before pouring the eggs in.  Bake at 375 for about 14 minutes or so.  It gets a little messy as you can see.
