This was so simple yet so delicious.  We all really enjoyed it.  A lovely weeknight meal!  My Little Gluten Free Girl loves chicken, so I wanted to just make a simple chicken dinner for us last night and here is what I came up with.

Pesto Chicken

I put three chicken breasts in a hot skillet and drizzled Tuscan Herb olive oil over each piece along with a few pinches of salt.  You can use whatever olive oil you have.  Let them cook on that side for about 3 minutes on high heat, turn them over and do the same thing on the other side cooking for another 3 minutes.

Put the skillet in the oven at 450 degrees for another 8 minutes.  I  put a piece of fresh mozzarella cheese on top of each piece of chicken right before going in the oven, this helps to keep it moist.

Take out the chicken after about 4 minutes and drizzle about a tablespoon of basil pesto on each piece of chicken and put back in the oven for the rest of the time.  You can make your own pesto if you want or you can use store bought pesto, which is what I do.

Take out and let rest for about 5 minutes.  So juicy, flavorful and simple!
