This is one of our new favorites!  I will admit that I am not very good at boiling eggs, yes… I said it!  I just have never been good at making hard boiled eggs!  My Little Gluten Free Girl loves hard boiled eggs so usually she has them when we are at my Mom’s house!  Well, my Mom was visiting us yesterday and so I asked her for a lesson in how she makes her hard boiled eggs and now we have some for the week!  Thanks Mom 🙂

Avocado Egg Salad Sandwiches

The avocado is supposed to take the place of the mayo, but we still used a tiny bit of mayo 🙂

First, you need 4 hard boiled eggs which you of course can make ahead of time.  Peel them and rinse them briefly and chop them up, set aside.

Next, take one ripe avocado and cut around it to cut in half.  Take out the pit and scoop out the flesh, mash into a bowl with the chopped up eggs!

Mix in a bit of yellow mustard and a pinch of salt and pepper.  We did put in one spoonful of mayo which gave it a great flavor with the avocado!  YUM!

I  toasted some gluten free bread and we enjoyed our avocado and egg salad sandwiches!  Gluten Free and Yummy 😉
